Since this is a top hit for Google, I'd figure I'd share that Macrium Reflect is great at migrating Intel software RAID volumes. It's a paid product but it works great:
1. Install Macrium Reflect
2. Clone to image using an external hard drive
3. Connect new hard disks and create your RAID volume in Intel RAID
4. Using the Windows PE boot CD, boot into Macrium
5. Restore your image to the new RAID array.
Works like a charm, I had Dell accidentally ship a few computers with RAID 0 instead of RAID 1 and used this methodology to convert the RAID 0 to RAID 1 arrays.
